  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • Salt and black pepper, to taste
  • 1 tablespoon apple cider vinegar
  • Fresh cilantro, chopped (for garnish)
  • Shredded cheese, sour cream, and chopped green onions (optional, for serving)

Instructions:

  1. Cook the Beef:
    • In a large pot or Dutch oven, heat the olive oil over medium heat.
    • Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Deglaze with Bourbon:
    • Pour in the bourbon, scraping up any browned bits from the bottom of the pot. Allow the bourbon to cook down slightly, about 2-3 minutes.
  3. Add the Spices:

  4. Add the Beans and Tomatoes:
    • Stir in the kidney beans, black beans, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, and brown sugar. Mix well to combine.
