Ingredients:
- For the Masala:
- 2 large tomatoes, pureed
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit (adjust for heat)
- 1 bell pepper (capsicum), chopped (red, green, or yellow)
- For the Spices:
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust for heat)
- Salt to taste
- For the Dish:
- 300 grams mushrooms, cleaned and sliced
- 2 tablespoons oil (vegetable or ghee)
- Fresh coriander leaves, for garnish
Instructions:
- Heat the Oil: In a kadai or large skillet, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Sauté Onions and Spices: Add the chopped onions and sauté until they turn golden brown. Stir in the ginger-garlic paste and green chilies, cooking for another minute until fragrant.
- Add Tomatoes and Spices: Pour in the tomato puree and add the coriander powder, turmeric powder, red chili powder, and salt. Cook this mixture for about 5-7 minutes, stirring occasionally, until the oil begins to separate from the masala.
- Cook the Mushrooms: Add the sliced mushrooms and chopped bell pepper to the pan. Mix well, and cover to cook for 5-6 minutes, allowing the mushrooms to release their moisture and absorb the flavors.
- Finish with Garam Masala: Once the mushrooms are tender, sprinkle the garam masala over the top and stir gently. Cook for another minute to combine the flavors.
- Garnish and Serve: Remove from heat and garnish with fresh coriander leaves. Serve hot with naan, roti, or rice for a delicious meal. Enjoy the rich, aromatic flavors of Kadai Mushroom!
