Kadai Mushroom

Kadai Mushroom is a flavorful and aromatic Indian dish that celebrates the earthy goodness of mushrooms. This vibrant curry features sautéed mushrooms cooked in a spicy tomato-based gravy, enriched with a blend of traditional Indian spices and fresh bell peppers. The name “Kadai” refers to the wok-like vessel in which the dish is traditionally prepared, giving it a unique, smoky flavor. Perfect as a main course or a side dish, Kadai Mushroom pairs beautifully with naan, roti, or steamed rice, making it a delightful addition to any Indian meal.

Ingredients:

  • For the Masala:
    • 2 large tomatoes, pureed
    • 1 large onion, finely chopped
    • 1 tablespoon ginger-garlic paste
    • 2 green chilies, slit (adjust for heat)
    • 1 bell pepper (capsicum), chopped (red, green, or yellow)
  • For the Spices:
    • 1 teaspoon cumin seeds
    • 1 teaspoon coriander powder
    • 1 teaspoon garam masala
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon red chili powder (adjust for heat)
    • Salt to taste
  • For the Dish:
    • 300 grams mushrooms, cleaned and sliced
    • 2 tablespoons oil (vegetable or ghee)
    • Fresh coriander leaves, for garnish

Instructions:

  1. Heat the Oil: In a kadai or large skillet, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Sauté Onions and Spices: Add the chopped onions and sauté until they turn golden brown. Stir in the ginger-garlic paste and green chilies, cooking for another minute until fragrant.
  3. Add Tomatoes and Spices: Pour in the tomato puree and add the coriander powder, turmeric powder, red chili powder, and salt. Cook this mixture for about 5-7 minutes, stirring occasionally, until the oil begins to separate from the masala.
  4. Cook the Mushrooms: Add the sliced mushrooms and chopped bell pepper to the pan. Mix well, and cover to cook for 5-6 minutes, allowing the mushrooms to release their moisture and absorb the flavors.
  5. Finish with Garam Masala: Once the mushrooms are tender, sprinkle the garam masala over the top and stir gently. Cook for another minute to combine the flavors.
