Jibarito

The Jibarito, a unique and delicious sandwich from Puerto Rico, is a delightful fusion of flavors and textures. Instead of the typical bread, this sandwich uses crispy, fried green plantains as the “buns,” providing a crunchy exterior that perfectly complements the savory filling inside. Traditionally filled with thinly sliced steak, garlic mayo, lettuce, tomatoes, and cheese, the Jibarito is a savory and satisfying treat that offers a taste of Puerto Rican street food culture. Ingredients:

  • 2 large green plantains
  • 1 lb thinly sliced steak (ribeye or sirloin works well)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • 4 slices of provolone or Swiss cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons garlic powder
  • 1 tablespoon lime juice
  • Lettuce leaves
  • Tomato slices
  • Cooking oil for frying

Instructions:

  1. Prepare the Garlic Mayo: In a small bowl, mix together the mayonnaise, garlic powder, lime juice, and a pinch of salt. Set aside in the refrigerator.
  2. Prepare the Plantains: Peel the green plantains and cut them in half lengthwise. Heat cooking oil in a large frying pan over medium heat. Fry the plantain halves for about 2-3 minutes on each side, until they are golden and slightly soft. Remove them from the pan and place them on a cutting board. Flatten each piece using the bottom of a heavy pan or a plantain press, then return them to the frying pan and fry until crispy and golden brown on both sides. Drain on paper towels and sprinkle with a little salt.
  3. Cook the Steak: Season the steak slices with salt, pepper, and minced garlic. In a separate pan, heat the olive oil over medium-high heat. Add the steak slices and cook for about 2-3 minutes on each side, until cooked through and slightly crispy on the edges.
  4. Assemble the Jibarito: Take one of the fried plantain slices and spread a layer of garlic mayo on it. Add a slice of cheese, followed by the cooked steak, lettuce, and tomato. Place another fried plantain slice on top to complete the sandwich.
  5. Serve: Serve the Jibarito immediately while the plantains are still crispy. Enjoy your Jibarito with a side of crispy fries or a fresh salad.
