The beef is slow-cooked until it’s melt-in-your-mouth tender, while the tortellini adds a satisfying, cheesy element that makes this stew both filling and delicious. Infused with Italian herbs and a hint of garlic, this stew is a comforting meal that’s as easy to prepare as it is to enjoy. Serve it with crusty bread for a complete and satisfying dinner.

Ingredients:

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 package (9 oz) cheese tortellini, fresh or frozen
  • 2 cups fresh spinach or kale, chopped (optional)
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
  2. Sauté the Vegetables: In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables are softened. Add the minced garlic and cook for another minute until fragrant.
  3. Simmer the Stew: Return the browned beef to the pot. Stir in the diced tomatoes, beef broth, tomato paste, dried oregano, dried basil, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
  4. Cook the Tortellini: About 10 minutes before serving, add the tortellini to the pot. If using fresh spinach or kale, stir it in as well. Continue to simmer until the tortellini is cooked through, about 7-10 minutes.
  5. Serve: Remove the bay leaf and ladle the stew into bowls. Sprinkle with grated Parmesan cheese if desired, and serve hot.

Enjoy this Italian Beef Tortellini Stew as a warm, hearty meal that’s perfect for a cozy family dinner or a special weekend treat!
