Ingredients:
- 1 pound chicken thighs, boneless and skinless, cut into chunks
- 12 oz andouille sausage, sliced
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 1 onion, finely chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 2 bay leaves
- 1 cup sliced okra (optional)
- 1 tablespoon Worcestershire sauce
- Cooked rice for serving
- Fresh parsley, chopped, for garnish
Instructions:
- Set the Instant Pot to sauté mode and add 1 tablespoon of oil. Brown the sausage for 4-5 minutes until crispy on the edges. Remove and set aside.
- Add the remaining oil to the Instant Pot. Sprinkle in the flour, stirring constantly to make a roux. Cook for 6-8 minutes until the roux turns a deep brown color.
- Add the onion, bell pepper, and celery (the “holy trinity” of Cajun cooking) to the roux and sauté for 3-4 minutes until softened. Add the garlic and cook for another minute.
- Stir in the Cajun seasoning, thyme, smoked paprika, and black pepper. Add the chicken chunks and sauté for 2-3 minutes until lightly browned.
- Pour in the chicken broth, scraping the bottom of the pot to deglaze. Add the sausage back to the pot, along with the bay leaves, Worcestershire sauce, and okra if using.
- Close the lid and set the Instant Pot to pressure cook on high for 10 minutes. After cooking, do a quick release.
- Once the pressure is released, open the lid, stir the gumbo, and adjust seasoning with salt and pepper if needed. Discard bay leaves.
- Serve the gumbo hot over cooked rice, and garnish with fresh parsley.
