Ingredients

  • 1 (14-ounce) can diced tomatoes
  • 1/4 cup red wine vinegar
  • 2 tablespoons sugar
  • 2 tablespoons capers, drained
  • 1/4 cup green olives, sliced
  • 1/4 cup black olives, sliced
  • Salt and pepper, to taste
  • 1/4 cup fresh basil, chopped (for garnish)
  • 2 tablespoons pine nuts (optional)

Instructions

  1. Prepare the Eggplant:
    • Place the diced eggplant in a colander and sprinkle with salt. Let it sit for about 20 minutes to draw out excess moisture. Rinse and pat dry with a paper towel.
  2. Sauté Vegetables:
    • Set the Instant Pot to “Sauté” mode. Add olive oil and heat until shimmering. Add the onion and garlic, and sauté until softened, about 3 minutes.
    • Add the red and yellow bell peppers and sauté for another 3-4 minutes until they begin to soften.
