Ingredients:
- 1 large head of cabbage
- 1 lb (450 g) ground beef
- 1/2 cup uncooked white rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup ketchup or tomato paste
- 1 can (15 oz) diced tomatoes
- 2 tbsp Worcestershire sauce
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 1 cup beef or vegetable broth
Instructions:
- Prepare the Cabbage: Fill a large pot with water and bring to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for 5-7 minutes until the outer leaves are softened. Remove the cabbage and let it cool slightly. Gently peel off 12-15 large leaves, being careful not to tear them.
- Prepare the Filling: In a large mixing bowl, combine the ground beef, uncooked rice, chopped onion, minced garlic, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix until well combined.
- Assemble the Rolls: Place a heaping tablespoon of the beef mixture in the center of each cabbage leaf. Fold the sides of the leaf over the filling and then roll it up from the bottom to encase the filling completely. Secure with a toothpick if necessary.
- Prepare the Sauce: In the Instant Pot, combine the ketchup (or tomato paste), diced tomatoes, and beef or vegetable broth. Stir to mix well.
- Cook the Rolls: Arrange the cabbage rolls in the Instant Pot, placing them on top of the sauce. Close the lid and set the valve to “Sealing.” Cook on High Pressure for 15 minutes.
