Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 potatoes, diced
  • 2 carrots, sliced
  • 1 cup frozen peas
  • 1 bell pepper, diced
  • 1 can (14 oz) coconut milk or water (for a lighter version)

Spices:

  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 1/2 tsp chili powder (adjust for heat preference)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the oil and sauté the aromatics: In a large pan or pot, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a minute. Add the chopped onions and cook until softened, about 5 minutes. Stir in the garlic and ginger, cooking for another minute until fragrant.
  2. Add the tomatoes and spices: Add the chopped tomatoes and cook until they break down and form a thick sauce, about 5-7 minutes. Stir in the ground coriander, turmeric, garam masala, and chili powder, cooking for another minute to toast the spices.
  3. Add the vegetables: Stir in the diced potatoes, carrots, bell pepper, and frozen peas. Pour in the coconut milk (or water) and bring the mixture to a simmer. Cover and cook for 15-20 minutes, or until the vegetables are tender.
  4. Season and garnish: Adjust the seasoning with salt and pepper to taste. Garnish with fresh cilantro, if desired.
  5. Serve: Serve the curry hot with basmati rice, naan, or roti, and enjoy!
