Hot Pockets

Homemade Hot Pockets are a fun, customizable version of the popular store-bought snack, filled with a variety of delicious ingredients tucked inside a soft, golden pastry. Whether you prefer classic fillings like ham and cheese or want to experiment with more creative options such as pizza or veggies, these handheld treats are perfect for a quick lunch, snack, or meal on the go. Making them from scratch allows you to control the ingredients while creating something fresh, flavorful, and satisfying. These Hot Pockets can also be made ahead of time and frozen for later!

Ingredients:

  • 1 package puff pastry (or homemade dough)
  • 1 cup cooked ham, diced (or other filling like pepperoni, chicken, or veggies)
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup pizza sauce (optional for pizza-style)
  • 1 egg, beaten (for egg wash)
  • Salt and pepper, to taste
  • Optional fillings: sautéed vegetables, cooked bacon, spinach, etc.

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the puff pastry: Roll out the puff pastry on a floured surface to about 1/8-inch thickness. Cut the dough into equal-sized rectangles, about 4×6 inches for a classic Hot Pocket size.
  3. Assemble the filling: In the center of each rectangle, add a few spoonfuls of your preferred filling (e.g., ham and cheese, or pizza sauce with pepperoni and mozzarella). Make sure to leave a border around the edges so you can seal the pockets.
  4. Seal the pockets: Brush the edges of each rectangle with the beaten egg. Fold the pastry over to form a pocket, pressing the edges together with a fork to seal tightly.
  5. Brush with egg wash: Place the sealed pockets on the prepared baking sheet and brush the tops with the remaining beaten egg for a golden, glossy finish.
  6. Bake: Bake in the preheated oven for 15-20 minutes, or until the Hot Pockets are golden brown and puffed.
  7. Serve: Let the Hot Pockets cool slightly before serving. These are great fresh out of the oven, but can also be frozen and reheated for later meals.
