Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 8 small corn tostadas (store-bought or homemade)
  • 2 tbsp olive oil
  • 1 tbsp chipotle chili powder (or chipotle in adobo, minced)
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 1 avocado, sliced
  • 1 cup shredded cabbage
  • 1/4 cup fresh cilantro, chopped

For the lime crema:

  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • Zest of 1 lime
  • Salt, to taste

Instructions:

  1. In a small bowl, whisk together the chipotle chili powder, honey, lime juice, garlic powder, cumin, salt, and pepper. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.
  3. Pour the honey-chipotle sauce over the shrimp and toss to coat. Cook for an additional 1-2 minutes until the shrimp are glazed and the sauce thickens slightly. Remove from heat.
  4. In a small bowl, mix together the sour cream, lime juice, lime zest, and a pinch of salt to create the lime crema.
  5. To assemble, spread a spoonful of lime crema onto each tostada. Top with shrimp, avocado slices, shredded cabbage, and a sprinkle of fresh cilantro.
  6. Serve immediately with extra lime wedges on the side.
