Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • 4 slices of ciabatta, sourdough, or your favorite artisan bread
  • 1/4 cup pesto (store-bought or homemade)
  • 4 slices mozzarella or provolone cheese
  • 1 ripe tomato, thinly sliced
  • 1/4 red onion, thinly sliced
  • Handful of fresh spinach or arugula
  • 2 tablespoons mayonnaise (optional)
  • Butter or olive oil for grilling

Instructions:

  1. Prepare the Chicken: Season the chicken breasts with salt and freshly ground black pepper. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes per side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Assemble the Sandwich: Spread a thin layer of pesto on one side of each slice of bread. If using, spread a thin layer of mayonnaise on the other side of two slices. Layer the sliced chicken, cheese, tomato, red onion, and spinach or arugula on two of the pesto-coated slices of bread. Top with the remaining slices of bread, pesto side down.
  3. Grill the Panini:
    • Using a Panini Press: Preheat the press according to the manufacturer’s instructions. Lightly butter the outside of each sandwich and place it in the press. Grill for about 3-5 minutes, or until the bread is golden and crispy and the cheese is melted.
    • Using a Stovetop Grill Pan: Heat the pan over medium heat. Lightly butter the outside of each sandwich and place them in the pan. Press down with a heavy skillet or a panini weight. Grill for 3-4 minutes on each side, or until the bread is crispy and the cheese is melted.
  4. Serve: Remove the sandwiches from the press or pan and let them cool slightly before slicing in half. Serve hot, with a side of chips, salad, or your favorite soup.

This Grilled Chicken Panini Sandwich is a delicious and satisfying meal that’s quick to make and bursting with flavor. Perfect for any occasion, this panini is sure to become a favorite in your household. Enjoy!
