  • 1 tsp cumin seeds

  • 1/2 tsp ground turmeric
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (optional)
  • 1/2 cup coconut milk or cream (optional for richness)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the oil: In a large pan, heat the oil or ghee over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until fragrant.
  2. Sauté the aromatics: Add the chopped onion and cook for 3-4 minutes, until softened and golden. Add the minced garlic, ginger, and green chili (if using), and sauté for another minute.
  3. Cook the tomatoes: Stir in the chopped tomatoes and cook until they break down and become soft, about 5 minutes. Add the ground coriander, turmeric, garam masala, and red chili powder (if using), stirring to combine the spices with the tomato mixture.
  4. Add the peas: Stir in the green peas, followed by 1/2 cup of water. Bring the mixture to a simmer and cook for 8-10 minutes, until the peas are tender and the flavors have melded.
  5. Finish with cream: For a richer masala, stir in the coconut milk or cream, and simmer for an additional 2-3 minutes. Season with salt to taste.
