Green Chile Ribs

These Green Chile Ribs are a mouthwatering fusion of smoky, tender pork ribs and the vibrant, slightly spicy flavors of green chile. Perfect for a weekend barbecue or a comforting dinner, these ribs are slow-cooked to perfection, allowing the green chile and spices to meld into the meat, resulting in a dish that’s both juicy and full of flavor. The tangy, earthy notes of the green chiles add a unique twist to traditional ribs, making this a must-try recipe for anyone who loves Southwestern cuisine.

Ingredients:

  • 2 racks of baby back ribs (about 4-5 pounds total)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 2 cups green chile sauce (homemade or store-bought)
  • 1/2 cup chicken broth
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 300°F (150°C).
  2. Prepare the Ribs: Remove the thin membrane from the back of the ribs for more tender results. Rub the ribs with olive oil, then season generously with salt, pepper, garlic powder, onion powder, cumin, and smoked paprika.
  3. Cook the Ribs: Place the seasoned ribs in a large roasting pan or on a baking sheet. Cover tightly with aluminum foil and bake for 2.5 to 3 hours, or until the ribs are tender and the meat is pulling away from the bones.
  4. Make the Green Chile Sauce: While the ribs are cooking, combine the green chile sauce, chicken broth, lime juice, and honey in a medium saucepan. Bring the mixture to a simmer over medium heat, stirring occasionally, for about 10 minutes to let the flavors blend.
  5. Glaze the Ribs: After the ribs are done, remove them from the oven and increase the oven temperature to 400°F (200°C). Brush the ribs generously with the green chile sauce, then return them to the oven, uncovered, for an additional 10-15 minutes, or until the sauce has caramelized slightly.
  6. Serve: Let the ribs rest for 5 minutes before slicing them between the bones. Garnish with chopped cilantro if desired. Serve with extra green chile sauce on the side for dipping.

Enjoy these Green Chile Ribs with a side of Mexican rice, roasted vegetables, or a fresh green salad for a complete meal!
