Green Chile Burritos

Ingredients:

  • 1.5 lbs beef chuck roast or pork shoulder, cut into chunks

  • 2 cups roasted green chiles, chopped (Hatch or Anaheim)
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 2 cups beef or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • Sour cream, for serving
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the Meat:
    • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef or pork chunks and brown on all sides, about 6-8 minutes. Remove the meat and set aside.
  2. Cook the Vegetables:
    • In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the Green Chiles and Simmer:
    • Return the browned meat to the pot. Add the chopped green chiles, diced tomatoes with green chiles, beef or chicken broth, ground cumin, and oregano. Stir to combine.

  4. Shred the Meat:
    • Remove the meat from the pot and shred it using two forks. Return the shredded meat to the pot and stir to combine with the sauce. Adjust seasoning with salt and pepper to taste.
  5. Assemble the Burritos:
    • Warm the flour tortillas either in a dry skillet or in the microwave. Spoon a generous amount of the green chile meat mixture onto each tortilla.
    • Sprinkle with shredded cheese and fold the tortillas into burritos by folding in the sides and rolling them up.
  6. Serve:
    • Serve the burritos hot, with a dollop of sour cream on top and a sprinkle of fresh cilantro.
