Greek Fish Bake

Greek Fish Bake is a light and flavorful dish inspired by the Mediterranean, combining tender white fish with a vibrant mix of tomatoes, olives, onions, and herbs. Baked to perfection with a drizzle of olive oil and a squeeze of fresh lemon, this dish is both healthy and satisfying. The bold, briny flavors of Kalamata olives pair beautifully with the sweet tomatoes and fragrant oregano, making this an easy yet impressive meal for any night of the week. Serve it with a side of rice, crusty bread, or a fresh Greek salad to complete the experience.

Ingredients:

  • 4 white fish fillets (such as cod, haddock, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)
  • Feta cheese crumbles (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
  2. Prepare the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute. Stir in the drained diced tomatoes, Kalamata olives, oregano, thyme, salt, and pepper. Cook for 2-3 minutes, allowing the flavors to combine.
  3. Assemble the Fish Bake: Place the fish fillets in the prepared baking dish. Spoon the tomato and olive mixture over the top of the fish, spreading it evenly. Drizzle the remaining olive oil and squeeze the juice of one lemon over the entire dish.
  4. Bake the Fish: Bake in the preheated oven for 20-25 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Garnish and Serve: Once baked, remove the dish from the oven and garnish with fresh parsley and feta cheese crumbles, if desired. Serve hot with a side of rice, crusty bread, or a fresh salad.

This Greek Fish Bake is a delicious way to bring the flavors of the Mediterranean to your table, offering a healthy and vibrant meal that’s full of fresh ingredients and bold tastes.
