Golden Peach Pie

Golden Peach Pie is the ultimate summer dessert, showcasing the sweet, juicy flavors of fresh peaches encased in a buttery, flaky pie crust. The peaches are lightly spiced with cinnamon and nutmeg, adding warmth to their natural sweetness, while a hint of lemon brings out their bright flavor. Ingredients:

  • 2 pie crusts (homemade or store-bought)
  • 6-7 ripe peaches, peeled and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • Coarse sugar, for sprinkling (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C). Roll out one pie crust and fit it into a 9-inch pie dish, trimming any excess dough.
  2. In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and nutmeg. Toss gently to coat the peaches evenly.
  3. Pour the peach mixture into the prepared pie crust, and dot the top with small pieces of butter.
  4. Roll out the second pie crust and place it over the peaches. Trim the edges, then crimp or press the edges together to seal. Cut a few slits in the top crust to allow steam to escape.
  5. Brush the top of the pie with the beaten egg and sprinkle with coarse sugar, if desired.
  6. Bake the pie for 20 minutes at 425°F, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
  7. Allow the pie to cool for at least 2 hours before slicing. Serve with ice cream or whipped cream and enjoy!
