Golabki, also known as stuffed cabbage rolls, is a beloved traditional dish in Polish cuisine, celebrated for its comforting flavors and hearty ingredients. This recipe features tender cabbage leaves wrapped around a savory filling of ground meat, rice, and aromatic spices, all simmered in a rich tomato sauce. Ingredients:
- 1 large head of cabbage
- 1 lb (450 g) ground beef or a mix of beef and pork
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup chopped fresh parsley
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- 2 cups tomato sauce
- 1 can (15 oz) diced tomatoes
- 1 cup beef or vegetable broth
- 2 tbsp olive oil
- 2 tbsp vinegar (white or apple cider, optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Cabbage: Bring a large pot of water to a boil. Remove the core from the cabbage and place the whole head in the boiling water. Cook for 5-7 minutes, or until the outer leaves are softened. Carefully peel off 12-15 large leaves and set them aside to cool.
- Make the Filling: In a large bowl, combine the ground meat, uncooked rice, chopped onion, minced garlic, egg, parsley, thyme, paprika, salt, and pepper. Mix until well combined.
- Assemble the Rolls: Place a heaping tablespoon of the meat mixture in the center of each cabbage leaf. Fold the sides over the filling and roll up from the bottom to encase the filling completely. Secure with a toothpick if necessary.
- Prepare the Sauce: In a large skillet or saucepan, heat the olive oil over medium heat. Add the tomato sauce, diced tomatoes, beef or vegetable broth, and vinegar (if using). Stir well and let the sauce simmer for 5 minutes.
- Cook the Golabki: Spread a thin layer of the tomato sauce in the bottom of a large pot or Dutch oven. Arrange the cabbage rolls seam-side down in the pot, packing them snugly. Pour the remaining sauce over the rolls. Bring to a simmer, cover, and cook on low heat for 1.5 to 2 hours, or until the meat and rice are cooked through and tender.
