Instructions

  1. Make the pastry: In a large bowl, mix together the gluten-free flour, sugar, and salt. Rub the cold butter into the flour mixture with your fingers or a pastry cutter until it resembles fine breadcrumbs. Add the beaten egg and cold water, one tablespoon at a time, mixing until the dough comes together. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
