Ingredients:

  • 1.5 to 2 lbs pork loin or pork chops

  • For the Glaze:
    • 1/4 cup balsamic vinegar
    • 2 tablespoons honey
    • 1 tablespoon Dijon mustard
    • 1 tablespoon soy sauce

Instructions:

  1. Marinate the Pork:
    • In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and pepper.
    • Rub the mixture all over the pork, ensuring it is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for a deeper flavor.
  2. Prepare the Glaze:
    • In a small saucepan, combine the balsamic vinegar, honey, Dijon mustard, and soy sauce.
    • Bring the mixture to a simmer over medium heat, stirring occasionally, until it thickens slightly, about 5-7 minutes. Remove from heat and set aside.
  3. Cook the Pork:
    • Preheat the oven to 375°F (190°C).
    • Heat a large ovenproof skillet over medium-high heat. Add a little olive oil to the pan if needed.

  4. Glaze and Roast:
    • Brush the pork with half of the balsamic glaze, reserving the other half for later.
    • Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes (for chops) or 25-30 minutes (for a loin), or until the internal temperature reaches 145°F (63°C).
    • Halfway through cooking, brush the pork with more of the glaze.
  5. Rest and Serve:
    • Remove the pork from the oven and let it rest for 5-10 minutes before slicing.
    • Drizzle with any remaining glaze and garnish with additional fresh rosemary if desired.
