It’s an ideal dish for using up leftover rice and creating a hearty, restaurant-quality meal at home.

Ingredients:

  • 1/2 pound steak (flank, sirloin, or ribeye), thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil, divided
  • 1 tablespoon fresh ginger, minced
  • 3 garlic cloves, minced
  • 2 large eggs, lightly beaten
  • 3 cups cooked, cooled rice (preferably day-old)
  • 1/2 cup peas and carrots (fresh or frozen)
  • 2 green onions, sliced
  • 2 tablespoons soy sauce (or more to taste)
  • 1 tablespoon rice vinegar
  • Salt and pepper, to taste
  • Optional garnish: sesame seeds, more sliced green onions

Instructions:

  1. Marinate the Steak: In a small bowl, combine the thinly sliced steak with 1 tablespoon of soy sauce and sesame oil. Let it marinate for at least 15 minutes while you prepare the other ingredients.
  2. Cook the Steak: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated steak and cook for 2-3 minutes until browned and cooked through. Remove the steak from the skillet and set aside.
  3. Sauté the Aromatics: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced ginger and garlic, and sauté for 1-2 minutes until fragrant.
  4. Scramble the Eggs: Push the ginger and garlic to one side of the skillet and pour in the beaten eggs. Cook, stirring occasionally, until scrambled and fully cooked.
  5. Add the Vegetables and Rice: Add the peas and carrots to the skillet and stir-fry for 2-3 minutes until tender. Add the cooked rice and stir everything together, breaking up any clumps of rice.
  6. Finish the Fried Rice: Return the cooked steak to the skillet, along with the green onions, 2 tablespoons of soy sauce, and rice vinegar. Stir-fry for another 2-3 minutes, allowing the flavors to combine. Season with salt and pepper to taste.
  7. Serve: Garnish with sesame seeds and additional sliced green onions, if desired. Serve hot and enjoy your Ginger Steak Fried Rice as a quick, flavorful meal!
