Ginger Chicken Noodle Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 boneless, skinless chicken breasts or thighs
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar (optional)
  • 6 oz egg noodles or any noodle of choice
  • 1 cup spinach or kale (optional)
  • Salt and pepper, to taste
  • Fresh cilantro or green onions for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the garlic and ginger and cook for another minute until fragrant.
  2. Pour in the chicken broth and water, and bring to a simmer. Add the chicken breasts or thighs, carrots, celery, soy sauce, and rice vinegar (if using).
  3. Cover the pot and simmer for 20-25 minutes, or until the chicken is cooked through and tender.
  4. Remove the chicken from the pot, shred it using two forks, and return the shredded chicken to the soup.
  5. Stir in the noodles and cook for an additional 5-7 minutes, or until the noodles are cooked to your liking.
  6. If using, add spinach or kale in the last minute of cooking until wilted.
  7. Season the soup with salt and pepper to taste. Garnish with fresh cilantro or green onions before serving.
