German Potato Pancakes

German Potato Pancakes, known as “Kartoffelpuffer” or “Reibekuchen,” are a beloved comfort food in Germany. They are crispy on the outside and tender on the inside, made with simple ingredients like potatoes, onions, eggs, and flour. These savory pancakes are typically served with applesauce or sour cream, making them a delightful combination of sweet and savory flavors. Perfect for breakfast, lunch, or dinner, these potato pancakes are easy to prepare and can be enjoyed by the whole family.

Ingredients

  • 4 medium potatoes (about 1 pound)
  • 1 small onion
  • 2 eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying
  • Applesauce or sour cream for serving

Instructions

  1. Prepare the Potatoes and Onion:
    • Peel the potatoes and onion, and then grate them using a box grater or a food processor with a grating attachment.
    • Place the grated potatoes and onion in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  2. Mix the Batter:
    • In a large mixing bowl, combine the grated potatoes and onion with the eggs, flour, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. Fry the Pancakes:
    • Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
    • Once the oil is hot, drop about 2 tablespoons of the potato mixture per pancake into the skillet. Flatten each portion with the back of a spoon to form thin pancakes.
    • Fry the pancakes for about 3-4 minutes on each side, or until golden brown and crispy.
  4. Drain and Serve:
    • Remove the pancakes from the skillet and drain them on a plate lined with paper towels to remove excess oil.
    • Serve the potato pancakes warm with a side of applesauce or sour cream.

Enjoy these German Potato Pancakes as a delicious snack, appetizer, or main dish!
