The natural sweetness of the spaghetti squash pairs beautifully with the rich, aromatic garlic, while a sprinkle of Parmesan cheese and fresh herbs adds a touch of elegance to this simple yet satisfying dish. Whether served as a light main course or a side dish, Garlic Spaghetti Squash is sure to become a favorite in your kitchen.

Ingredients:

  • 1 medium spaghetti squash
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped (optional)
  • Lemon wedges, for serving

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Spaghetti Squash: Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of each half with 1 tablespoon of olive oil and season with salt and pepper. Place the squash halves cut-side down on a baking sheet lined with parchment paper.
  3. Roast the Squash: Roast the squash in the preheated oven for 35-40 minutes, or until the flesh is tender and can be easily shredded with a fork.
  4. Cook the Garlic: While the squash is roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté until fragrant, about 2 minutes. Be careful not to burn the garlic.
  5. Shred the Squash: Once the squash is cooked, use a fork to scrape the flesh into long, spaghetti-like strands. Add the squash strands to the skillet with the garlic.
  6. Toss and Season: Toss the spaghetti squash in the garlic oil until evenly coated. Season with additional salt and pepper to taste.
  7. Add the Finishing Touches: Remove the skillet from heat and stir in the Parmesan cheese, fresh parsley, and basil (if using).
  8. Serve: Serve the Garlic Spaghetti Squash warm, with lemon wedges on the side for a fresh, zesty kick.

Enjoy your Garlic Spaghetti Squash as a flavorful, nutritious dish that’s perfect for any occasion!
