Fruit ‘n’ Cream Crepes

Ingredients

Instructions

  1. Make the Crepe Batter:
    • In a medium bowl, whisk together the flour, sugar, and salt.
    • In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Mix until well combined.
    • Gradually add the wet ingredients to the dry ingredients, whisking continuously until the batter is smooth and free of lumps. Let the batter rest for 15-30 minutes.
  2. Prepare the Filling:
    • In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Set aside in the refrigerator.
  3. Cook the Crepes:
    • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter or cooking spray.
    • Pour about 1/4 cup of batter into the center of the pan, swirling to spread evenly into a thin layer.
    • Cook for 1-2 minutes until the edges start to lift and the bottom is golden brown. Flip and cook the other side for another 30 seconds.
    • Remove from the pan and repeat with the remaining batter, stacking crepes on a plate.
  4. Assemble the Crepes:
