Fried Mashed Potato Balls

Ingredients:

  • 2 cups mashed potatoes (preferably chilled)
  • 1 cup shredded cheddar cheese (or any cheese of your choice)
  • 1/4 cup cooked, crumbled bacon (optional)
  • 2 green onions, finely chopped (optional)
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 cups breadcrumbs (panko or regular)
  • Salt and pepper, to taste
  • Oil for frying

Instructions:

  1. Prepare the mixture: In a large bowl, combine the mashed potatoes, shredded cheese, bacon (if using), and green onions. Season with salt and pepper, and mix until all ingredients are well incorporated.
  2. Shape the balls: Using your hands or a small scoop, shape the potato mixture into 1-inch balls. Place them on a baking sheet and refrigerate for about 15-20 minutes to firm up.
  3. Set up the breading station: Place the flour in one shallow bowl, the beaten eggs in another, and the breadcrumbs in a third.
  4. Bread the balls: Roll each potato ball in the flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs, pressing the breadcrumbs gently to adhere.
  5. Fry the potato balls: Heat about 2 inches of oil in a deep skillet or pot over medium heat. Fry the potato balls in batches, turning occasionally, until they are golden brown and crispy (about 2-3 minutes per side).
  6. Drain and serve: Remove the fried potato balls with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Serve hot with your favorite dipping sauce.
