Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken thighs (or breasts)
  • 1 cup buttermilk
  • 1 tablespoon hot sauce (optional)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • Vegetable oil, for frying

For the Waffles:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

To Serve:

  • Maple syrup
  • Butter

Instructions:

For the Fried Chicken:

  1. In a large bowl, combine the buttermilk and hot sauce. Add the chicken, making sure it is fully submerged. Cover and refrigerate for at least 2 hours or overnight.
  2. In another large bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  3. Heat about 1 inch of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
  4. Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge the chicken pieces in the flour mixture, pressing to adhere the coating.
  5. Fry the chicken in batches, turning occasionally, until golden brown and cooked through, about 6-8 minutes per side. Transfer to a wire rack to drain and keep warm.

For the Waffles:

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the eggs, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Lightly grease the waffle iron and pour the batter onto the preheated waffle iron. Cook according to the manufacturer’s instructions until the waffles are golden brown and crisp.

To Serve:

  1. Place a waffle on a plate, top it with a piece of fried chicken, and add a pat of butter.
  2. Drizzle with maple syrup and serve immediately. Enjoy the delightful blend of flavors and textures!
