Fried Apple Pies

Instructions:

  1. Make the Pie Crust: In a large bowl, whisk together flour, salt, and sugar. Add the chilled butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Apple Filling: In a medium saucepan over medium heat, combine diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Cook for about 5-7 minutes, stirring occasionally, until the apples soften slightly. Remove from heat and let cool.
  3. Roll Out the Dough: On a floured surface, roll out one disk of dough to about 1/8-inch thick. Use a round cutter (about 4-5 inches in diameter) to cut out circles. Repeat with the second disk.
  4. Assemble the Pies: Place a tablespoon of the apple filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork. Repeat with remaining circles and filling.
  5. Fry the Pies: In a deep skillet, heat about 2 inches of vegetable oil over medium heat. Once hot, carefully add the pies in batches, frying for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.
