Fresh Tomato Soup

Ingredients:

  • 2 lbs fresh ripe tomatoes, halved
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 4 cups vegetable or chicken broth
  • 1 teaspoon sugar (optional, to taste)
  • Salt and pepper, to taste
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup heavy cream or milk (optional)
  • Croutons or a dollop of sour cream for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C). Place the halved tomatoes on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast the tomatoes for 25-30 minutes until they are soft and slightly caramelized.
  2. In a large pot, heat the remaining olive oil over medium heat. Add the chopped onion and garlic, sautéing until they become soft and translucent, about 5 minutes. Stir in the tomato paste and cook for another 2 minutes.
  3. Add the roasted tomatoes to the pot, including any juices from the baking sheet. Pour in the vegetable or chicken broth and bring the mixture to a simmer. Cook for 15-20 minutes to allow the flavors to meld together.
  4. Remove the pot from the heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  5. Season the soup with salt, pepper, and sugar if needed. Stir in the fresh basil and heavy cream or milk if using. Simmer for an additional 5 minutes to heat through.
  6. Serve the soup hot, garnished with croutons, a dollop of sour cream, or additional fresh basil if desired.
