FRESH TOMATO BASIL SOUP

Fresh Tomato Basil Soup is a light, flavorful, and comforting dish made with ripe tomatoes, fresh basil, and a hint of garlic. It’s the perfect recipe for showcasing the sweetness of fresh, in-season tomatoes. This soup is simple to prepare, making it an ideal option for a quick lunch or dinner. Serve it with a side of crusty bread or a grilled cheese sandwich for a classic, wholesome meal.

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 6-8 large ripe tomatoes, chopped (or 4 cups diced canned tomatoes)
  • 1 cup vegetable or chicken broth
  • 1/2 cup fresh basil leaves, chopped
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and pepper, to taste
  • 1/4 cup heavy cream (optional, for creaminess)
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese (optional, for garnish)

Instructions:

  1. Sauté the onion and garlic: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute, stirring frequently.
  2. Cook the tomatoes: Add the chopped fresh tomatoes (or canned tomatoes if using) to the pot. Stir to combine with the onion and garlic. Cover and let the tomatoes cook down for 10-15 minutes until they release their juices and soften.
  3. Add the broth and seasonings: Stir in the vegetable or chicken broth, chopped fresh basil, sugar (if using), salt, and pepper. Bring the mixture to a simmer and cook for another 10 minutes, allowing the flavors to meld.
  4. Blend the soup: Using an immersion blender, carefully puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
  5. Add cream (optional): If you prefer a creamier soup, stir in the heavy cream at this point. Simmer for another 2-3 minutes until heated through.
  6. Adjust seasoning: Taste the soup and adjust the seasoning with more salt, pepper, or sugar if needed.
  7. Serve: Ladle the soup into bowls and garnish with fresh basil leaves and grated Parmesan cheese if desired. Serve with crusty bread or a grilled cheese sandwich for a complete meal.

This Fresh Tomato Basil Soup is the perfect blend of sweet, savory, and herby flavors, making it a comforting and delicious option for any time of year!
