Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon balsamic vinegar
  • 1 can (10.5 oz) condensed French onion soup
  • 1 cup sour cream
  • 1 cup shredded Gruyère cheese (or Swiss cheese)
  • 1/2 cup grated Parmesan cheese
  • 1 cup French-fried onions
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C).
  2. Cook the chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with salt, pepper, and thyme. Cook the chicken for 6-8 minutes on each side, or until fully cooked. Remove from the skillet and set aside.
  3. Caramelize the onions: In the same skillet, add the remaining tablespoon of olive oil and sliced onions. Cook over medium-low heat for about 20 minutes, stirring occasionally, until the onions are soft and golden brown. Add the sugar, balsamic vinegar, and garlic, cooking for another 2-3 minutes until the onions are caramelized and fragrant.
  4. Prepare the sauce: In a mixing bowl, combine the condensed French onion soup and sour cream. Stir until smooth and well combined.
  5. Assemble the casserole: In a 9×13-inch baking dish, layer the cooked chicken breasts. Spread the caramelized onions evenly over the chicken. Pour the soup mixture over the onions, making sure to cover the entire dish. Sprinkle the Gruyère cheese evenly over the top.
  6. Add the topping: Combine the grated Parmesan cheese and French-fried onions in a small bowl. Sprinkle this mixture evenly over the casserole.
  7. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  8. Garnish and serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired, then serve hot.

Enjoy your comforting French Onion Chicken Casserole with a side of crusty bread or a light salad!
