Focaccia Barese

Focaccia Barese is a traditional Italian flatbread hailing from the Bari region, known for its incredibly soft interior and a crisp, golden exterior. What sets this focaccia apart is the addition of boiled potatoes in the dough, which keeps it moist and tender, along with the fragrant olive oil that coats the dough before baking. Topped with cherry tomatoes, olives, and a sprinkle of oregano, Focaccia Barese offers a simple yet rich flavor that’s perfect as an appetizer, side, or even a stand-alone snack. Ingredients:

  • 1 cup boiled and mashed potatoes
  • 2 1/4 tsp active dry yeast
  • 2 1/2 cups all-purpose flour
  • 1 cup warm water
  • 1 tsp sugar
  • 1/4 cup olive oil (plus extra for drizzling)
  • 1 tsp salt
  • 10-12 cherry tomatoes, halved
  • 1/4 cup black or green olives
  • 1 tsp dried oregano
  • Coarse sea salt for sprinkling

Instructions:

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the mashed potatoes, flour, salt, olive oil, and the yeast mixture. Stir until a dough forms.
  3. Transfer the dough to a floured surface and knead for about 10 minutes, or until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat your oven to 425°F (220°C). Grease a baking sheet or round pan with olive oil.
  6. Punch down the dough and press it into the prepared pan, stretching it to fit. Use your fingers to dimple the surface of the dough.
  7. Top the dough with halved cherry tomatoes and olives, pressing them lightly into the surface. Drizzle generously with olive oil and sprinkle with dried oregano and coarse sea salt.
  8. Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and crisp on the edges.
  9. Let it cool slightly before slicing and serving.
