Fish Tacos With Guacamole

Fish tacos are a delicious, light, and flavorful dish that brings the taste of the coast right to your table. These tacos feature perfectly seasoned, flaky fish nestled in warm tortillas, topped with a fresh and zesty homemade guacamole, and finished with a variety of colorful toppings like shredded cabbage, fresh cilantro, and a squeeze of lime. Ingredients:

For the Fish:

  • 1 lb white fish fillets (such as tilapia, cod, or halibut)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lime

For the Guacamole:

  • 3 ripe avocados, peeled and pitted
  • 1 small red onion, finely chopped
  • 1 small tomato, diced
  • 1 jalapeño, seeded and finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

For the Tacos:

  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage or lettuce
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions:

  1. Prepare the Fish:
    • Preheat the oven to 400°F (200°C) or heat a grill to medium-high.
    • In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
    • Place the fish fillets on a baking sheet or grill pan, drizzle with olive oil, and sprinkle the seasoning mixture evenly over both sides of the fish.
    • Squeeze the lime juice over the fish.
    • Bake or grill the fish for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  2. Make the Guacamole:
    • In a medium bowl, mash the avocados with a fork until smooth.
    • Stir in the red onion, tomato, jalapeño, cilantro, and lime juice.
    • Season with salt and pepper to taste. Set aside.
  3. Assemble the Tacos:
    • Warm the tortillas in a dry skillet or directly over a gas flame until pliable.
    • Place a portion of the fish in the center of each tortilla.
    • Top with a spoonful of guacamole, shredded cabbage or lettuce, and fresh cilantro.
    • Serve with lime wedges on the side for squeezing over the tacos.
