Finger Sandwiches

These versatile little sandwiches can be filled with a variety of savory spreads, meats, cheeses, and vegetables. Ingredients:

  • 8 slices of white or whole wheat bread, crusts removed
  • 4 oz cream cheese, softened
  • 1/2 cucumber, thinly sliced
  • 4 oz smoked salmon or deli meats (turkey, ham, etc.)
  • 2 hard-boiled eggs, sliced
  • Butter, for spreading
  • Salt and pepper, to taste
  • Fresh herbs (dill, parsley, or chives), for garnish

Instructions:

  1. Start by preparing your bread. Cut off the crusts and lightly butter each slice on one side.
  2. For cucumber and cream cheese sandwiches: Spread a thin layer of cream cheese on four slices of buttered bread. Top with thinly sliced cucumbers, add a sprinkle of salt and pepper, and cover with another slice of bread.
  3. For smoked salmon sandwiches: Spread a layer of cream cheese on four slices of buttered bread. Place smoked salmon slices on top, garnish with fresh dill, and cover with another slice of bread.
  4. For egg sandwiches: Butter four slices of bread, place sliced hard-boiled eggs on top, season with salt and pepper, and add fresh herbs for garnish. Cover with another slice of bread.
  5. Once all the sandwiches are assembled, cut each sandwich into quarters—either into squares or triangles.
  6. Serve immediately or cover with a damp paper towel and refrigerate until ready to serve.
