FIESTA SMOTHERED CHICKEN

Fiesta Smothered Chicken is a vibrant and flavorful dish that brings the taste of the Southwest to your dinner table. Tender chicken breasts are seasoned and cooked to perfection, then smothered in a zesty mixture of bell peppers, onions, black beans, corn, and melted cheese. Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned and drained)
  • 1 can (10 ounces) diced tomatoes with green chilies (such as Rotel)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Fresh cilantro, chopped, for garnish
  • Optional toppings: sour cream, sliced jalapeños, avocado, lime wedges

Instructions:

  1. Season the Chicken:
    • Season the chicken breasts on both sides with salt, pepper, chili powder, cumin, and paprika.
  2. Cook the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, or until the chicken is browned and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set it aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the sliced onion and bell peppers. Sauté for 4-5 minutes, until the vegetables are softened. Add the minced garlic and cook for another 1 minute until fragrant.
  4. Add the Beans, Corn, and Tomatoes:
    • Stir in the black beans, corn, and diced tomatoes with green chilies. Cook for 3-4 minutes until everything is heated through and well combined. Season with additional salt and pepper if needed.
  5. Smother the Chicken:
    • Return the cooked chicken breasts to the skillet, nestling them into the vegetable mixture. Spoon some of the mixture over the top of each chicken breast. Sprinkle the shredded cheese evenly over the chicken and vegetables.
  6. Melt the Cheese:
    • Reduce the heat to low, cover the skillet, and cook for another 2-3 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve:
