Ingredients:

  • 1 whole turkey (10-12 pounds)
  • 3 tablespoons olive oil or melted butter
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Fresh herbs (such as rosemary, thyme, and sage) for stuffing the cavity
  • 1 onion, quartered
  • 1 lemon, halved

Instructions:

  1. Preheat the oven to 425°F (220°C). Place a rack in the lower third of the oven.
  2. Prepare the turkey: Remove the giblets and neck from the turkey cavity. Pat the turkey dry with paper towels.
  3. Season the turkey: Rub the olive oil or melted butter all over the turkey, including under the skin. In a small bowl, mix the salt, pepper, garlic powder, onion powder, and paprika. Rub this seasoning mixture all over the turkey.
  4. Stuff the cavity: Place the fresh herbs, onion, and lemon inside the turkey cavity for added flavor.
  5. Position the turkey: Place the turkey breast-side down on a roasting rack set in a large roasting pan. Tuck the wings under the body of the turkey to prevent burning.
  6. Roast the turkey: Roast the turkey in the preheated oven for 45 minutes. Then, reduce the oven temperature to 350°F (175°C) and continue roasting for an additional 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the thigh.
  7. Check for doneness: If the turkey is browning too quickly, you can tent it loosely with aluminum foil.
  8. Rest the turkey: Once the turkey is done, remove it from the oven and let it rest for 15-20 minutes before carving. This allows the juices to redistribute throughout the meat.
