Egg Bites

Egg bites are a versatile and delicious breakfast option, perfect for busy mornings or a protein-packed snack. These bite-sized delights are made with a base of fluffy eggs, enhanced with your choice of vegetables, cheese, and meats. You can customize them to suit your taste preferences or use up leftovers in the fridge. Once baked, egg bites can be stored in the refrigerator or freezer, making them an easy grab-and-go option that ensures you start your day with a nutritious boost.

Ingredients

  • 6 large eggs
  • 1/4 cup milk (any type)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced cooked bacon, ham, or sausage (optional)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped spinach or kale
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Non-stick cooking spray or muffin liners

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Muffin Tin: Lightly grease a muffin tin with non-stick cooking spray or line it with muffin liners.
  3. Mix the Eggs: In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  4. Add Fillings: Stir in the cheese, cooked meat (if using), bell peppers, spinach, and onions into the egg mixture. Mix until evenly distributed.
  5. Fill the Muffin Tin: Pour the egg mixture into each muffin cup, filling them about three-quarters full.
  6. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
  7. Cool and Serve: Allow the egg bites to cool in the tin for a few minutes before removing them. Serve immediately or store in an airtight container in the refrigerator for up to 5 days.

Tips

  • Freezing: To freeze, let the egg bites cool completely, then place them in a single layer on a baking sheet to freeze individually before transferring them to a freezer bag. They can be reheated in the microwave for a quick breakfast.
  • Customization: Feel free to experiment with different vegetables and cheeses, like mushrooms, tomatoes, or feta, to create your perfect combination.
