Easy Buckeye Bars

These Easy Buckeye Bars are a simplified version of the classic Ohio treat, Buckeyes, which traditionally involve dipping peanut butter balls into chocolate. This recipe keeps the same delicious flavors but eliminates the need for rolling and dipping, making it much quicker to prepare. The bars feature a creamy, sweet peanut butter layer topped with a rich chocolate layer, creating a perfect balance of flavors and textures. These bars are ideal for a quick dessert or a sweet treat to share with friends and family.

Ingredients:

  • 1 cup unsalted butter, melted
  • 2 cups graham cracker crumbs
  • 2 cups powdered sugar
  • 1 ½ cups creamy peanut butter
  • 1 ½ cups semi-sweet chocolate chips
  • ¼ cup unsalted butter

Instructions:

  1. Prepare the Peanut Butter Base:
    • In a large mixing bowl, combine the melted butter, graham cracker crumbs, powdered sugar, and peanut butter. Stir until the mixture is smooth and well combined.
    • Press the peanut butter mixture evenly into the bottom of a 9×13-inch baking dish lined with parchment paper.
  2. Make the Chocolate Topping:
    • In a microwave-safe bowl, combine the chocolate chips and ¼ cup unsalted butter. Microwave in 30-second intervals, stirring between each interval, until the mixture is completely melted and smooth.
    • Pour the melted chocolate over the peanut butter layer, spreading it evenly with a spatula.
  3. Chill and Serve:
    • Refrigerate the bars for at least 1 hour or until the chocolate is set.
    • Once set, lift the bars out of the pan using the parchment paper and cut them into squares or rectangles.
    • Serve and enjoy!

These bars can be stored in an airtight container in the refrigerator for up to a week, making them a great make-ahead option.
