Double-Berry Jalapeno Jam

  • 2 cups fresh strawberries, hulled and chopped
  • 2 cups fresh raspberries

  • 1/4 cup lemon juice
  • 1 package (1.75 oz) powdered fruit pectin
  • 4 cups granulated sugar

Instructions:

  1. Prepare the Berries: In a large pot, combine the chopped strawberries and raspberries. Using a potato masher, crush the berries until they are broken down but still chunky.
  2. Add Jalapenos: Stir in the finely chopped jalapenos and lemon juice. Bring the mixture to a boil over medium heat, stirring constantly.
  3. Add Pectin: Gradually stir in the powdered fruit pectin, making sure it’s fully dissolved. Bring the mixture back to a boil.
  4. Add Sugar: Add the granulated sugar all at once, stirring constantly until the sugar is completely dissolved. Bring the jam to a full rolling boil (a boil that doesn’t stop bubbling when stirred) and boil for 1-2 minutes.
  5. Test for Doneness: To check if the jam is ready, place a small amount on a chilled plate. If it wrinkles when pushed with your finger, it’s done. If not, continue boiling for another minute and test again.
  6. Jar the Jam: Remove the pot from heat and skim off any foam. Ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims clean, apply the lids, and process the jars in a boiling water bath for 10 minutes.
  7. Cool and Store: Remove the jars from the water bath and let them cool completely. Store the jam in a cool, dark place. Once opened, refrigerate and use within a few weeks.
