DIRTY RICE

Dirty Rice is a flavorful and hearty dish from Louisiana Creole cuisine, known for its rich blend of spices and savory ingredients. Traditionally made with ground meat, such as pork or chicken livers, and combined with aromatic vegetables like bell peppers, celery, and onions, this dish gets its name from the “dirty” appearance the rice takes on after being cooked with these ingredients. Enhanced with Cajun or Creole seasonings, Dirty Rice offers a spicy, robust flavor that makes it a perfect side dish or main course. This versatile dish can be easily customized with your favorite proteins and spices, making it a go-to option for a satisfying meal that’s both comforting and packed with character.

Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 pound ground beef
  • 1/2 pound ground pork or chicken livers, finely chopped
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Meat: In a large skillet or Dutch oven, heat the vegetable oil over medium heat. Add the ground beef and ground pork (or chicken livers) and cook until browned, breaking up the meat with a spoon as it cooks. Drain any excess fat.
  2. Sauté the Vegetables: Add the chopped onion, bell pepper, and celery to the skillet. Cook for 5-7 minutes, or until the vegetables are softened. Stir in the garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the Rice and Spices: Stir in the rice, ensuring it’s coated with the meat and vegetable mixture. Add the Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper. Mix well.
  4. Cook the Rice: Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff and Serve: Remove the skillet from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and garnish with sliced green onions and chopped parsley before serving.

Dirty Rice is a delicious and satisfying dish that combines the savory flavors of meat and spices with the comforting texture of rice, making it a perfect accompaniment to any Southern-inspired meal. Enjoy it as a side dish or a main course for a taste of authentic Creole cuisine.
