Ingredients:
- 1 cup (225g) unsalted butter
- 8 oz (225g) dark chocolate, chopped
- 1 ¼ cups (250g) granulated sugar
- ¾ cup (150g) brown sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup (125g) all-purpose flour
- ¼ cup (25g) unsweetened cocoa powder
- ½ tsp salt
- 1 cup (150g) fresh or frozen cherries, pitted and chopped
- ½ cup (85g) dark chocolate chips or chunks
Instructions:
- Preheat the oven to 350°F (175°C). Line a 9×9-inch (23×23 cm) baking pan with parchment paper or lightly grease it.
- Melt the butter and dark chocolate together in a heatproof bowl set over simmering water (double boiler method) or in short bursts in the microwave, stirring frequently until smooth. Let it cool slightly.
- In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until well combined and slightly frothy.
- Slowly add the melted chocolate mixture to the egg and sugar mixture, whisking constantly until smooth and glossy.
- In a separate bowl, sift together the flour, cocoa powder, and salt. Gently fold the dry ingredients into the chocolate mixture until just combined.
- Stir in the chopped cherries and dark chocolate chips or chunks, making sure they are evenly distributed throughout the batter.
- Pour the batter into the prepared pan and spread it out evenly with a spatula.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake, as you want the brownies to stay fudgy.
- Let the brownies cool completely in the pan before cutting into squares.
Enjoy your rich, fruity, and indulgent Dark Chocolate Cherry Brownies!
