  • Salt and pepper to taste

Instructions:

  1. Sauté the aromatics: Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until softened and translucent. Add the minced garlic and ginger, and cook for another minute until fragrant.
  2. Toast the spices: Stir in the curry powder, turmeric, cumin, and chili powder (if using). Cook the spices for about 1-2 minutes, stirring constantly, to release their aromas.
