Crock Pot Roast

A slow-cooked pot roast is the ultimate comfort food, and making it in a crock pot makes it even more effortless. The long, slow cooking process allows the beef to become tender and flavorful while soaking up the savory goodness of herbs and vegetables. This recipe is perfect for busy days when you want to come home to a hearty, home-cooked meal. With a few simple ingredients and minimal preparation, you can create a rich, mouth-watering roast that will satisfy your family’s appetite.

Ingredients:

  • 3-4 lb chuck roast
  • 1 onion, chopped
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, cut into quarters
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 sprigs fresh rosemary (or 1 tsp dried)
  • 2 sprigs fresh thyme (or 1 tsp dried)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chuck roast with salt and pepper on all sides. Sear the roast in the skillet for 2-3 minutes per side until browned.
  2. In the bottom of the crock pot, place the chopped onions, carrots, and potatoes.
  3. Add the seared roast on top of the vegetables.
  4. Sprinkle the minced garlic, rosemary, and thyme over the roast.
  5. Pour the beef broth and Worcestershire sauce over the top of the roast and vegetables.
  6. Cover the crock pot with the lid and cook on low for 8-10 hours, or on high for 5-6 hours, until the roast is tender and easily pulls apart.
  7. Once done, remove the roast and vegetables from the crock pot. Let the roast rest for a few minutes before slicing.
  8. Serve the roast with the vegetables and use the liquid from the crock pot as a gravy.
