CRISPY FISH AND CHIPS

Ingredients:

For the fish:

Instructions:

  1. Prepare the chips: Preheat the oven to 425°F (220°C). Toss the potato fries in olive oil, salt, and pepper, then spread them in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  2. Heat the oil for frying: In a large, deep skillet or frying pan, heat 2-3 inches of vegetable oil to 350°F (180°C).
  3. Make the batter: In a bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually pour in the cold beer (or sparkling water) and whisk until smooth. The batter should be thick enough to coat the fish but not too heavy.
  4. Batter and fry the fish: Pat the fish fillets dry with paper towels, then dip each fillet into the batter, ensuring it’s fully coated. Carefully lower the fish into the hot oil and fry for 4-5 minutes on each side, or until the batter is golden brown and the fish is cooked through. Remove and drain on paper towels.
  5. Serve: Serve the crispy fish with the baked chips, along with tartar sauce, malt vinegar, and lemon wedges on the side.
