Ingredients:

  • 1 1/2 pounds chicken tenders
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs or panko
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying (or cooking spray for baking)
  • 8-10 taco shells (soft or hard)
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • Sour cream or ranch dressing, for drizzling
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the Breading Station:
    • Set up three shallow dishes: one with the flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder, onion powder, paprika, cumin, salt, and black pepper.
  2. Coat the Chicken:
    • Dredge each chicken tender in the flour, shaking off any excess. Dip it into the egg, then coat it in the breadcrumb mixture, pressing gently to ensure the crumbs stick well. Repeat with all chicken tenders.
  3. Cook the Chicken:
    • To Fry: Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Add the chicken tenders in batches, cooking for 3-4 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Transfer to a paper towel-lined plate to drain.
    • To Bake: Preheat the oven to 400°F (200°C). Place the breaded chicken tenders on a baking sheet lined with parchment paper. Lightly spray with cooking spray. Bake for 20-25 minutes, turning halfway through, until golden and crispy.
  4. Assemble the Tacos:
    • Warm the taco shells according to the package instructions. Place a crispy chicken tender in each shell. Top with shredded lettuce, diced tomatoes, and shredded cheddar cheese. Drizzle with sour cream or ranch dressing.
  5. Garnish and Serve:
    • Sprinkle fresh cilantro over the tacos for added flavor and color. Serve immediately with lime wedges on the side for an extra burst of citrus.

Crispy Chicken Tacos are a delicious and satisfying dish that combines the crunch of perfectly cooked chicken with the fresh flavors of classic taco toppings. These tacos are quick to prepare and perfect for any occasion, bringing a tasty twist to your taco night.
