Instructions:

  1. Cook the Sausage: In a large pot, heat the olive oil over medium heat. Add the smoked sausage slices and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the pot and set aside.
  2. Sauté the Vegetables: In the same pot, add the diced onion, celery, and bell pepper. Cook until softened, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Add the Potatoes and Spices: Add the diced potatoes, Cajun seasoning, smoked paprika, and cayenne pepper (if using) to the pot. Stir to combine the spices with the vegetables.
