Creamed Spinach

Ingredients:

  • 2 tablespoons unsalted butter

  • 1 cup heavy cream

  • Salt and freshly ground black pepper, to taste
  • 1 1/2 pounds fresh spinach, washed and stems removed (or 1 pound frozen spinach, thawed and drained)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions:

  1. Prepare the Spinach:
    • If using fresh spinach, blanch it in boiling water for 1-2 minutes until wilted, then transfer it to an ice bath to cool. Drain well and squeeze out any excess water. Chop the spinach finely and set aside.
  2. Cook the Onion and Garlic:
    • In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Make the Cream Sauce:
    • Sprinkle the flour over the onions and garlic, stirring constantly to form a roux. Cook the flour mixture for 1-2 minutes to eliminate any raw flour taste. Gradually whisk in the milk and cream, ensuring there are no lumps. Continue to cook the mixture, stirring frequently, until it thickens and becomes creamy, about 5-7 minutes.
  4. Season and Combine:
    • Stir in the ground nutmeg, salt, and pepper to taste. Add the chopped spinach to the cream sauce and stir until the spinach is fully incorporated and heated through. If you like, stir in the grated Parmesan cheese for added richness and flavor.
  5. Serve:
    • Transfer the creamed spinach to a serving dish and enjoy it warm alongside your favorite main course.

This dish is best served immediately, but it can also be made ahead of time and reheated gently on the stove over low heat.
