Cream Wafers

Ingredients:

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1/3 cup heavy cream

  • 1/4 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Food coloring (optional)

Instructions:

  1. Prepare the Dough:
    In a large mixing bowl, cream together the softened butter and heavy cream until smooth. Gradually add the flour, mixing until a soft dough forms. Divide the dough in half, flatten each portion into a disk, and wrap in plastic wrap. Refrigerate for at least 1 hour or until firm.
  2. Roll and Cut the Cookies:
    Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one portion of the dough to about 1/8 inch thick. Using a small round or shaped cookie cutter, cut out the dough. Sprinkle granulated sugar on both sides of each cutout, then place them on an ungreased baking sheet.
  3. Bake the Cookies:
    Bake in the preheated oven for 7-9 minutes, or until the edges are just barely golden. Remove from the oven and transfer the cookies to a wire rack to cool completely.
  4. Prepare the Filling:
    In a small bowl, beat together the softened butter, powdered sugar, and vanilla extract until light and fluffy. If desired, divide the filling and tint each portion with a different food coloring.
  5. Assemble the Wafers:
    Spread a small amount of the filling on the flat side of one cookie, then top with another cookie to create a sandwich. Repeat with the remaining cookies and filling.
  6. Serve and Enjoy:
    Store the cream wafers in an airtight container at room temperature. These cookies are best enjoyed within a few days for the freshest taste and texture.
