Ingredients

For the Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon milk

Instructions

  1. Make the Pie Crust: In a large mixing bowl, whisk together the flour, salt, and sugar. Add the chilled butter cubes and cut it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing just until the dough comes together. Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the Apple Filling: In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Mix until the apples are evenly coated.
  3. Roll Out the Crust: Preheat the oven to 400°F (200°C). On a lightly floured surface, roll out one of the chilled dough discs to fit a 9-inch pie dish, leaving a bit of overhang. Place the rolled dough into the pie dish.
