Coronation Quiche

Coronation Quiche is a delightful savory tart that became famous as part of British royal celebrations. It combines the richness of eggs and cream with flavorful ingredients like spinach, broad beans, and sharp cheddar in a flaky, buttery crust. The quiche’s vibrant colors and creamy texture make it a perfect dish for brunches, picnics, or special occasions. Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 2-3 tbsp cold water

For the Filling:

  • 4 large eggs
  • 1 1/4 cups heavy cream
  • 1/2 cup milk
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cooked spinach, chopped and drained
  • 1/2 cup cooked broad beans (or substitute with peas)
  • Salt and pepper, to taste
  • Fresh thyme, for garnish

Instructions:

  1. Prepare the Crust: In a food processor or bowl, mix the flour and salt. Add the cubed butter and pulse or cut in using a pastry cutter until the mixture resembles coarse crumbs. Gradually add cold water, 1 tablespoon at a time, until the dough comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess. Prick the base with a fork and line with parchment paper and baking beans or pie weights. Blind bake for 15 minutes, remove the weights, and bake for another 5 minutes until golden. Set aside to cool.
  3. Prepare the Filling: In a large bowl, whisk together the eggs, cream, and milk. Stir in the cheddar, Parmesan, spinach, and broad beans. Season with salt and pepper.
  4. Pour the filling into the baked crust, spreading it evenly. Bake the quiche for 30-35 minutes, or until the center is set and golden brown on top.
  5. Let the quiche cool slightly before serving. Garnish with fresh thyme.
