CORNED BEEF DINNER

  • 8 cups water

  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 1 small head of cabbage, cut into wedges
  • 4 large carrots, peeled and cut into large chunks
  • 6-8 small red or Yukon Gold potatoes, halved
  • 2 tablespoons fresh parsley, chopped, for garnish
  • Mustard or horseradish sauce, for serving

Instructions:

  1. Prepare the Corned Beef:
    • Rinse the corned beef brisket under cold water to remove excess salt. Place it in a large pot or Dutch oven.
  2. Add Aromatics:
    • Add the spice packet that came with the corned beef, along with the black peppercorns, bay leaves, mustard seeds, whole cloves (if using), onion, and garlic to the pot.
    • Pour in enough water to cover the brisket by about an inch.
  3. Cook the Corned Beef:
    • Bring the water to a boil, then reduce the heat to a simmer. Cover the pot and let the corned beef cook for 2 1/2 to 3 hours, or until the meat is tender and can be easily pierced with a fork. Skim off any foam that rises to the surface during cooking.
  4. Add the Vegetables:
    • About 45 minutes before the corned beef is done, add the potatoes and carrots to the pot.
    • 15 minutes later, add the cabbage wedges. Continue to simmer until the vegetables are tender.
  5. Rest and Slice the Corned Beef:
    • Remove the corned beef from the pot and let it rest for 10 minutes. Slice it against the grain into thin slices.
  6. Serve:
    • Arrange the sliced corned beef on a platter, surrounded by the vegetables. Sprinkle with chopped fresh parsley.
    • Serve hot, with mustard or horseradish sauce on the side.
